Cheese mousse with red berries
I have the blog abandadito, with these heats I have no desire to cook, I'm going to fast, cool things and that's it, but I wanted to do something to release these cool glasses that my neighbor Mari Santos has given me, to thank her from here and now that the thermomix has been bought to give you the idea for a fresh dessert.

Mousse de cheese with red berries
300 gr of creamy cheese for spread
150 gr. of condensed milk
3 egg yolks
1 lemon juice
1 lemon yolk grater
3 egg whites at snow point
For red fruit sauce:
80 gr of sugar
20 gr of raspberry vinegar
300 gr of red fruits
First of all, we assemble the whites with a pinch of salt and reserve them.
Batimos well the egg yolks, add the cheese, condensed milk, juice and lemon zest and mix everything.
We integrate carefully with the mounted whites, with enveloping movements so that they do not get off.
We pour in glasses and leave to cool for 2 hours in the fridge.
Meanwhile put in a saucepan to fire the red fruits, vinegar and sugar and let cook for 8 minutes over medium heat.
When the mousse is curd we cover with the fruits red and we serve cold.
We put the butterfly on the blades and assemble the yolks 3 minutes at speed 4.
We add the cheese, juice, grated rind, condensed milk and mix 10 seconds at speed 3.
remove to a bowl and mix carefully with the whites mounted.
Pour the mousse into individual glasses or bowls and let Set in the fridge for a couple of hours.
Put the red fruits, vinegar and sugar in the glass and program 10 minutes, 100º, speed 1.
